In Cuba, canned vegetables were essential staples of the home pantry. Canned asparagus and especially canned peas, known as "petit pois" were the most popular. Although the petit pois pea is just a standard pea picked when it is young and slightly sweeter, the name in Cuba became synonymous with the best peas. It may have been the fancy French name, or just the allure of something "imported" from another country, but Cubans considered canned petit pois peas as the ultimate pea!

You may notice that the Three Guys From Miami never call for canned asparagus or peas in our recipes. For one thing, we have so many fresh vegetables available in Miami we just don't have to resort to using canned vegetables.

If you grew up in a Cuban household and want to duplicate the authentic flavors you remember, we encourage you to use your favorite canned vegetables in any recipe. We won't tell a soul!
